Tänkte att det var dags för ett nytt ”Enkla middagstipset” (se fler tips HÄR) inför kommande vecka. Det bjuds på massor av grönt och snabblagat som sig bör på vardagskvällar (nej, det är ju inte fel på helgen heller).
Thought it was time for a new ”Simple dining tip” (see more tips HERE) for the upcoming week. It is all about greens and as always super fast cooked as it should be on weekdays (yes, it works for weekends too).
Hugs to all of you and don´t forget to enjoy the evening!
Cauliflower rice with eggs and vegetables
4 servings
1 cauliflower
2 tablespoons tamari soy sauce (I use THIS)
1 tablespoon sesame oil (I use THIS)
1 tablespoon grated ginger
0.25 teaspoon white pepper
3 eggs
2 tablespoons canola oil (for frying) (I use THIS)
3 minced garlic cloves
1 chopped red onion
2 grated carrots
1 small can of drained corn kernels
1, 5 cup frozen green peas
salt
pepper
2 teaspoons sesame seeds
Do like this:
1. Chop the onion and mince the garlic cloves. Fry onion and garlic for about 3-4 minutes over medium heat.
2. Meanwhile; grate the cauliflower and put it aside.
3. Mix tamari soy sauce, sesame oil, ginger and white pepper in a small bowl. Put aside.
4. Fry the eggs on both sides. Let cool before you cut them into small pieces. Put aside.
5. Add carrots and frozen peas to the onions. Fry until the vegetables are tender, about 3-4 more minutes.
6. Add cauliflower, eggs, corn and soy sauce. Fry while stirring for about 3-4 minutes or until the cauliflower is tender.
7. Add salt and pepper to taste. Garnish with sesame seeds. Serve immediately.
